    Ingredients

    Corn and avocado salsa

    • 1 cup corn kernels
    • 1 ripe avocado, cubed
    • cup chopped cilantro
    • 1 shallot, very finely chopped
    • 1 tbsp. olive oil
    • Juice of ½ lime
    • Salt and pepper

    Nachos

    • 1 package tortilla chips
    • 1 tomato, diced
    • 1 cup black or red beans, cooked or canned
    • 1 cup cheddar cheese, grated
    • 1 log (125 g) Soignon Goat Cheese, sliced into rounds
    Preparation

     

    1. In a small bowl, combine all ingredients for the salsa. Set aside.
    2. Cover a large baking sheet with parchment paper. Spread the tortilla chips on the baking sheet.
    3. Sprinkle with diced tomatoes, beans and grated cheddar. Cover with goat cheese slices and broil in the oven for 2 to 3 minutes, until the cheese has melted and slightly browned.
    4. Pour the corn and avocado salsa over the nachos and serve immediately.
