The rich aroma of vanilla and the warm nuttiness of almond really highlight the flavour of OKA’s rind.
Per person :
- 45 g OKA
- 45 ml (3 tbsp) lemon-vanilla almonds
Lemon vanilla almonds
- 250 ml (1 cup) whole almonds
- 15 ml (1 tbsp) olive oil
- 3 ml (½ tsp) salt
- Finely grated zest of 1 lemon
- 1 vanilla bean, pulverized in a coffee grinder, or 10 ml (2 tsp) vanilla extract
- Toast almonds with oil and salt in a large frying pan over medium-high heat for 6 minutes, stirring continuously.
- The almonds will darken in colour and start to split open.
- Remove from the heat, incorporate the zest and vanilla bean, and cool completely
