OKA with lemon vanilla almonds

The rich aroma of vanilla and the warm nuttiness of almond really highlight the flavour of OKA’s rind.


Per person :

  • 45 g OKA
  • 45 ml (3 tbsp) lemon-vanilla almonds

Lemon vanilla almonds

  • 250 ml (1 cup) whole almonds
  • 15 ml (1 tbsp) olive oil
  • 3 ml (½ tsp) salt
  • Finely grated zest of 1 lemon
  • 1 vanilla bean, pulverized in a coffee grinder, or 10 ml (2 tsp) vanilla extract
  1. Toast almonds with oil and salt in a large frying pan over medium-high heat for 6 minutes, stirring continuously.
  2. The almonds will darken in colour and start to split open.
  3. Remove from the heat, incorporate the zest and vanilla bean, and cool completely
